No, it’s not a really bad Kirby- it’s a mediocre Jigglypuff 😉

The pumpkin muffins turned out beautifully, and they’re easy. Here’s the recipe:

Pumpkin Muffins
Oven 350F

Line muffin or mini-muffin pan with paper liners, or spray with nonstick cooking spray. This recipe will make 12 full-size muffins or 24 minis.

You’ll need:
1.5 cups all-purpose flour
1 tsp baking powder
1 15-oz can solid pack pumpkin (NOT pie mix)
1/3 cup vegetable oil
2 large eggs (I used 1/2 cup eggbeaters)
1 teaspoon pumpkin-pie spice( OR fill a teaspoon with dashes of cinnamon, nutmeg, ground cloves, ginger root powder, and allspice like I did)
1.25 cups granulated sugar
1/2 tsp baking soda
1/2 tsp salt

Small dish of cinnamon-sugar (I threw a couple of teaspoons of sugar into a silicone cupcake cup, threw in a generous dash of cinnamon and stirred it)


Oven rack in middle, oven preheated to 350F.

Whisk together flour and baking powder in small bowl, set aside.

Whisk together pumpkin, oil, eggs, spices, the 1.25 cups sugar, baking soda and salt in a large bowl till smooth. I used a mixer on low. Add flour gradually until all is combined and smooth.

Ladle or pipe batter into cups; fill 3/4 of the way. (I always pipe- WAY less mess). Sprinkle tops with cinnamon sugar. Bake for 25-30 mins, or until muffin bounces back and toothpicks come out clean.

note: these will LOOK done before they actually are. To avoid the bad kind of moist, make sure to do both the bounceback test and the toothpick test.
